It is the first oil produced during the year from olives coming only from our estates and cultivated exclusively according to the directives of Organic Agriculture. The Novello is obtained only from hand-picked olives in advance of the right degree of ripeness, the harvest takes place exclusively in the month of September. The Novello oil is specially bottled in transparent glass bottles in order to appreciate its intense green color.The production of the Novello Line is limited to the period from the end of September until the fourth week of October.

Features

This oil is born in the company's olive groves located in the municipalities of San Mauro Marchesato and Scandale, in the hills of the Crotonese Marquisate.

It is a blend of different olive cultivars, of which more than 60% is made up of the Carolea cultivar while the remainder is made up of the Biancolilla and Leccino cultivars; they are also very thick cultivars.

The Novello Oil is produced exclusively in September from the selection of olives suitable for early harvest. The result is an oil with a bright green color and fresh and persistent flavors. The degree of fruitiness is Medium - Intense.

Doing organic farming is a demanding activity as the means to feed plants and to defend against parasites are more expensive and also because organic production is lower than that with conventional agriculture.

However, organic has allowed us to obtain products of the highest quality, respecting nature. It is not a simple cultivation technique, but the process we carry out is synonymous with respect and love for our plants and our land. Organic means learning and interpreting the daily signals that plants send us. Observe, study and above all foresee with the help of Science and with respect for Nature. For us, cultivation operations are interventions for the care of our trees, and for this reason they never stop during the course of the year.

Sensory Profile

The Novello organic extra virgin olive oil has a wonderful intense green color. The nose is enveloping, with very fresh and persistent herbaceous aromas, marked notes of mown grass, parsley, basil and tomato. Persistent but harmonious in the mouth, it releases a pleasant freshness with notes of celery, chicory and artichoke. Balanced bitter and spicy.

Recommended combinations

The Novello organic extra virgin olive oil goes perfectly raw on the classic bruschetta, on which it will enhance its bright green color, also ideal for legume soups and red meats. Excellent in dishes where you want to enhance its freshness.
